Me and my wife plus two friends will be travelling St.Petersburg-Beijing this December and we would like to know when will be the earliest time we could start to make bookings for the train journey, hotels etc.

Ian, you may book your train tickets not earlier than 45 days before departure.

how big chance is that buy a ticket direct from the desk ? also, i wonder if it's possible to buy trans-siberian ticket in Tallinn ?

You should check the tickets availability in advance on the Internet. If you are coming in winter, you will have a good chance.
If you are going to stop in some places on your way, you will easy buy ticket on one of meny trains from Moscow to Irkutsk where you may see Baikal Lake and then a ticket on dayly train from Irkutsk to Ulan Bator.
I don't know how to buy tickets on Russian trains in other countries.
