Cities mentioned on visa

I have been told that for a 30 days visa, you cannot mention more than 5 cities on your visa application. I intend to visit more cities than that along the Transsiberian railway. If , for example, Ulan Ude is not mentioned on my visa, can I still stay in Ulan Ude without any problem ? Or will the hotel refuse my booking if the city is not mentioned on my visa ?
