Which type of visa do I need? Is it possible to arrange a visa in Mongolia?

Dear Sir or madam of waytorussia

I hope you can help me with my questions. I intend to go to Russia in September and October 2016. First, I would like to stay in Russia for 15 days, then go to Mongolia for a week or so and then go back to Russia for another 15 days.

First question:
- So, I will stay in Russia for 30 days in total, but my second exit of Russia is more than 30 days later from my first entry date. Which type of Visa do I need for such a plan? Is a double-entry tourist visa enough for that?

Second question:
- Is it possible/easy to get a Russian visa in Ulan Bator (Mongolia)? My idea: I could arrange a single entry tourist visa from my home country (Switzerland) for my first stay in Russia. And then, when I am in Mongolia, I could apply for a new single-entry visa for my second stay in Russia.

Third question:
- Is it possible to enter Russia some days later than the date of which the visa is issued? Or do I need to enter Russia on the exact date the visa is valid from?
